This tortellini, ham and cheese casserole recipe is quick to throw together and serves 12! The recipe is great for potlucks, large families and anyone who loves leftovers.
Although I do enjoy good leftovers myself, I did have to give half of the bake to my brother. My son is still on baby food, so it was just my husband and I eating it. How much ham and cheese can 2 people really eat? If you have a small family, I would definitely suggest cutting the recipe in half. Or, you also have the option of freezing some, but I haven’t tried it to vouch for the success.
This recipe is delicious any time of year, but is a life saver after the holidays when you have mounds of left over ham. I used this mac-and-cheese muffins recipe as my inspiration. You could easily bake this recipe in muffin cups as well, but it would make at least 24 cups, which is why I ultimately abandoned that idea and went with the casserole. Since the recipe is designed to hold it’s shape, it has the consistency of a quiche.
How to assemble the Cheesy Ham And Tortellini Bake:
- cutting board
- knife for dicing
- large mixing bowl
- large casserole dish
- silicone spatula
- measuring cups
- measuring spoons
- 3 cups Cheddar
- 3 eggs
- 3 cups milk
- 2 tablespoons garlic, minced
- 1 medium onion diced
- salt and pepper to taste
- 6 cups cheese tortellini
- 3 cups ham, diced
- 1-1/2 cups frozen sweet peas
- 1 cup Italian bread crumbs
- 2 tablespoons butter, melted

Preheat oven to 350 degrees.
In a large mixing bowl, combine 3 cups cheddar, 3 eggs, 3 cups milk, 2 tbsp garlic powder, 1 medium diced onion, salt and pepper.
After combined, gently fold in 6 cups tortellini and 3 cups ham. Then, transfer the mixture to a large casserole dish.

Stir together the melted butter and bread crumbs and sprinkle on top of the casserole. It is okay if some of the bread crumb are still dry.
Bake at 350 degrees for 45-60 minutes or until set. When finished, the casserole will be moist but firm, similar to quiche. (printable recipe below)
