This week our Mom Explores Book Club read the most adorable story, “Dragons Love Tacos” by Adam Rubin. In the book these Dragons seriously love tacos. Apparently, tacos are a dragon’s Channing Tatum. Seriously! But, oddly enough, one thing dragons despise is spicy salsa. Who knew?
- mixing bowl
- silicone spatula
- measuring cups
- 4 oz (1/2 block) cream cheese, softened
- 1/2 cup of sour cream
- 3/4 cup of salsa
Before beginning, make sure that the cream cheese is soft. If you don’t have time to leave it out, you can put it in the microwave for 10-20 seconds. Of course, you’ll want to take it out of the wrapper first. When softened, place the 4 oz. cream cheese, 1/2 cup of sour cream and 3/4 cup of salsa into a medium sized mixing bowl and stir until combined, using the silicone spatula.
This would be a great time to touch on fractions with your kids by measuring with a 1/4 cup. To help them visualize the fractions, have them use the 1/4 measuring cup to fill other measuring cups: 1/2 c, 3/4 c, 1 c. Be sure to talk about how you need 2 scoops to equal 1/2 cup, 3 scoops to equal 3/4 cup and 4 scoops to equal 1 cup. If they don’t seem understand it right way, don’t worry. Each time you cook with your kids, you can do similar exercises. Eventually, they’ll start to catch on.

When fully combined, there may still be a few very tiny lumps of cream cheese. This is totally fine and will not change the taste or texture.
Serve the dip with whole grain tortilla chips and healthy vegetables, like carrots and celery. Maybe even share some with your dragon. Happy cooking! (print the recipe below)
